## A Taste of Sunshine
Celebrity chef Kunal Kapur, known for his role as a judge on MasterChef India, has unveiled a simple mango jam recipe that captures the essence of the season. This homemade delight requires just three ingredients and avoids the preservatives often found in store-bought versions.
## Ingredients and Method
To create this "sunshine in a jar," you'll need 200g of raw mango, 600g of ripe mango, and 150g of sugar. Begin by peeling and chopping both types of mangoes. Blend them with sugar until smooth, or leave some chunks if you prefer a textured jam. Transfer the mixture to a saucepan, bring it to a boil, and then simmer until it thickens, which takes about 20 minutes. Once cooled, store the jam in a sterilised jar in the refrigerator.
## Versatile and Long-Lasting
This mango jam is perfect for spreading on toast, mixing into yoghurt, or enjoying straight from the jar. When properly stored, it can last up to a month in the fridge, and even longer if canned and unopened. Kapur's recipe is a testament to the simplicity and joy of homemade preserves, offering a sweet and tangy treat that embodies the spirit of mango season.
